History and use
What we’ve come to know as ‘soft drink’, like this popular early Australian brand Kirks, began with the discovery of mineral water in the late 16th century. Scientists learned that carbon dioxide, or gas carbonium, made the water ‘fizz’, and techniques were developed to make curative carbonated drinks.

The first carbonated soft drinks were prepared for customers on the spot in pharmacies or bars and cafes, where carbonated water was mixed with syrups and flavourings.

With the development of soft drink bottling techniques in the late 19th century, corner stores, milk bars and confectionary shops here in Australia could sell soft drinks in glass bottles. These Kirks bottles looked to have had crown sealed caps, rather than marble or cork stoppers.
